I’m Dr. Jonathan Leusden, DC. Most of this site is about Gentle Chiropractic Salt Lake, and if you found the other personal page, you already know about the flying. This page is about the third thing: home. Since 2011 I’ve lived in Sevier Valley in central Utah, the same valley that holds Cove and Monroe Peak, and over that time it’s turned into an orchard, a garden, a small flock of sheep, and a place where visiting pilots pitch a tent.
The orchard and the garden
I’ve planted more than a hundred heirloom varieties of apple, pear, peach, and plum since moving here, most of them chosen for flavor and history rather than what ships well or looks uniform in a bin. Around and beneath the trees there’s an extensive perennial planting too: flowers, herbs, and perennial vegetables that come back on their own every spring. Alongside all of that I put in a large annual vegetable garden every year. Between the two, most of what ends up on the table in summer and fall came from within a few hundred feet of the kitchen.
The sheep
We run a small herd of Suffolk sheep, raised on pasture. Lambs go to freezers in October, and if you’re local and interested in high-quality pasture-raised lamb, reach out. You can text or call 435-612-0411, the same number as the practice.
The Flying Farm
We call the place the Flying Farm, and it’s meant literally. Cove and Monroe Peak, the launches that draw pilots here from around the world for events like the Global Rescue X Red Rocks, the Niviuk Red Rocks Wide Open, and the Pan-American Championships, are close enough that visiting pilots sometimes just camp here instead of finding a motel. There’s space to pitch a tent, an outdoor flushable toilet, a heated outdoor shower for after a long flying day, and more often than not something from the garden ends up in the meal. The rest of it
